Black Bean Dip

Here is Rena's recipe for Black Bean Dip (see post from 2/20/09)

Black Bean Dip

1 tsp oil
1/2 c chopped onion
2 garlic cloves, minced
1/3 c salsa
1/2 tsp chili powder
1/2 tsp cumin
15 oz can black beans, drained
1/4 c cheese, jack or cheddar
1/4 c chopped fresh cilantro
Chopped tomatoes, lime slices, and cilantro for garnish

Heat oil in skillet and saute onion and garlic until tender. Add black beans and smoosh up with potato masher. Add salsa, chili powder, cumin; mix well. Add cheese and cilantro and stir until cheese is melted and entire mixture is nice and warm. Place in serving bowl and garnish as desired with chopped tomatoes, cilantro, and limes.
